Symphonia, Irish Apple Rum, 40%

It’s great to welcome new innovation into the spirits category.

Irish Apple Rum c/othewhiskeynut

The Woodlab Distillery in Co Tyrone have released this Caribbean Rum infused with Irish Jonagold Apples grown in Co Armagh to create Symphonia Irish Apple Rum.

I picked one up in my local Aldi for appraisal.

Technically I suppose it’s a spiced rum – which as the fastest growing rum category is no bad thing.

Initial nosing is full of sweet nutmeg & assorted spices – much like a liqueur – with a hint of apple purée.

Smooth on the palate. A lovely mixture of golden apples & a warming spiciness which grows to dominate the finish leaving a soft tingling caressed with baked apple.

I may not be the target audience – but it’s certainly an entertaining tipple.

Personally I’d have preferred experiencing the apple influence on it’s own – but as the spiced category is booming it’s fabulous to see a new Irish player on the scene.

Congratulations to The Woodland Lab & their Symphonia Irish Apple Rum.

I don’t know if Lidl are ahead of the posse predicting a Rum revival – but they have another miniature selection I couldn’t resist.

Ron Rumbero, Spiced Spirit, 37.5%

An attractively well balanced spiced rum offering. A bit too sweet for my liking – but a dark chocolate start contrasts with a gentle chilli led spicy finish.

Cream Liqueur c/othewhiskeynut

Ron Rumbero, Cream Liqueur with Rum, 15%

An easy going creamy liqueur that provides an entertaining alternative to the whiskey derived offerings. Sweet, thick & creamy with a decent hit of rum on the finish too!

Ron Rumbero, 3 Años, 38%

Now this one surprised me! A definite vegetal funk on the nose. Slightly sweet yet smooth palate with a lovely flourish of spice on the finish. A great combination.

Ron Rumbero, 7 Años, 38%

Rich, warm & inviting. Slightly oaky. Smooth delivery. The dry oaky tannins are reminiscent of a good whiskey. Not bad.

Thoughts

A lovely little quartet of rums to whet your appetite.

When choosing my favourite I had a little surprise. Normally I’d go for the aged version – but with these – the wonderful balance of the funky start & gorgeously spicy finish of the 3 Años won out in this instance.

If only I could get a full size bottle for the shelf!

Íon, Whiskey Cask Spiced Rum, 43%

The renewed & growing interest in brown spirits doesn’t just stop at whiskey.

Rum is also showing an increase in appreciation.

The  enterprising Íon Distillery near Omagh, County Tyrone, is banking on this appreciation by producing a rum aged in whiskey barrels!

I couldn’t resist trying it out.

A bottle was promptly sourced via the fast & efficient KWM Wine & Spirits online store in Kilkeel.

Íon – meaning pure – combine the history of the past blended with a sense of people & place finished in a modern innovative twist.

Sugar cane molasses from the Caribbean are distilled in a ‘doubler style’ copper pot still, infused with spices, cut with locally sourced water & laid to rest in ex-bourbon barrels.

Ogham style markings – found on ancient stones around Ireland – are used as an attractive motif on the bottle – along with images of the Pirate Queen Grace O’Malley’s Castle –  who possibly downed a few bottles of contraband rum in her time!

I poured a glass.

The lovely golden hued liquid gave off a gorgeously spicy bouquet of cinnamon, cloves & nutmeg over an underlying gentle toffee sweetness.

Light in body, the soft caramel notes gave way to a growing spiciness & warming heat in a smooth delivery.

The spices left an enjoyably prickly sensation at the end as they slowly faded.

Very entertaining.

More of a winter warmer to me than a summer sizzler.

Being a bit of a purist myself I couldn’t help wondering what the rum would be like without the additional spices which tended to dominate the more subtle flavours within.

However this is in contradiction to the latest trend which shows spiced rum to be the fastest growing category in this segment.

Perhaps Íon are onto a winner here!
